3rd Annual Pumpkin Carving Contest

Well it wouldn't be Halloween if we didn't have our annual pumpkin carving contest. This Halloween seemed like such a blur. I had to cancel our Halloween party because of our stupid mold situation {it's spreading, it's gross, and the walls are going to come down..literally!}. I didn't even dress up, which is really sad for someone who loves this holiday. But at least, at least, we had our annual contest! It made me feel like we were able to celebrate a little bit!

recipe: taco salad

Last night I made this taco salad for me and Matthew. It was so easy but really flavorful. I loved the Avocado Cilantro Dressing! Perfect for a simple weeknight meal.
Taco Salad with Avocado Cilantro Dressing (serves: 6, time: 1 hr)
from A Place at the Table Food, Faith and Friendship at the Immaculate Heart Center for Spiritual Renewal

INGREDIENTS for Avocado Cilantro Dressing:
2 cups fresh cilantro, roughly chopped
1 1/2 tablespoons lime or lemon juice
1 tablespoon red or white wine vinegar
4 medium green onions, chopped small
2 cloves garlic, minced
1 teaspoon salt
1/4-1/2 teaspoon sugar
1 medium avocado, halved, pitted, scooped from skin

INGREDIENTS for Taco Salad
1 tablespoon olive oil
1 pound ground turkey
1 teaspoon garlic powder
1/2 teaspoon ground chili powder
1/2 teaspoon ground cumin -- We don't like cumin so we omitted it
1/2 teaspoon dried oregano
1/2 teaspoon salt
6 tortillas, cut into 1/8-1/4 inch strips or triangle wedges
Oil for frying tortillas (e.g., peanut, safflower, vegetable)
8-9 cups romaine lettuce, shredded
2 medium bell peppers, any color, seeded and cut into strips
2 medium tomatoes, cut into wedges
2 green onions, sliced thin
5-6 radishes, sliced thin
1 15-ounce can kidney beans, drained and rinsed
2 cups shredded cheese of choice (jack, chedder, queso fresco)

DIRECTIONS
1. To make Avocado Cilantro Dressing, combine cilantro, citrus juice, vinegar, onions, garlic, salt, and 1/4 teaspoon sugar with 1/2 cup water in a blender. Blend on low until the cilantro and onions are well minced, stopping once to scrape down the sides of the blender.

2. Add avocado and blend, adding up to 1/2 cup more water until thinned to desired consistency. Taste for flavor balance and adjust as needed, adding the additional 1/4 teaspoon sugar if desired.

3. Chill until ready to use. This makes about 2 1/2 cups of dressing.

4. Heat the olive oil in a pan, add the turkey, and season with garlic powder, chili powder, cumin (if you like it), oregano, and salt. Saute over medium heat for 8-10 minutes, stirring frequently until full cooked. Remove from heat and let cool while preparing other ingredients.

5. Pour 1/2-inch frying oil into a small saucepan and heat over medium-high heat. After a few minutes, test the readiness of the oil by dropping in one tortilla strip. If it starts to sizzle quickly, the oil is ready. Drop in a handful of tortilla strips. Fry until golden, about two minutes, stirring frequently. Remove with a slotted spoon and drain in a bowl lined with paper towels. Repeat with the remaining strips, a handful at a time.

6. In a bowl or on salad plates, later lettuce, turkey, beans, pepper, tomato, green onions, radish, and cheese. Dress with Avocado Cilantro Dressing, and garnish with tortilla strips.

Alright so somewhat related..I don't eat meat but Matthew does. He was annoyed that I didn't want to prepare the turkey. What do you guys think? Should I make meat dishes for Matthew because he eats meat? Or should I let him do it? I'm curious as to what you guys think. I have nothing against people who eat meat, obviously I married someone that does, it's just personal preference.

Ginger Off 2010

This was such a fun weekend, in large part due to the great time we had on Saturday night with my friend Eden and her husband Zan. Eden is the most crafty person I know and we could talk for hours about the most random stuff and have the best time ever! She also has a super cute blog where she features all her adorable and crafty projects. Because Eden and I get along so well, we knew we had to set up our guys! They hit it off over a good old fashioned Ginger Off! Eden baked gingerbread  all by herself and prepared the cutest table with all sorts of candy to decorate our houses! Let me just tell you, gingerbread house making is a serious serious task! It is also one of the most challenging things ever! Walls were falling down, frosting "glue" got everywhere and there was an intense struggle over who got to use coconut for snow, cinnamon sticks for the roof, and peep trees for.. well, trees haha. The competition was Eden and me vs Zan and Matthew. {I think we won hands down} In all fairness to the boys team, there was a certain teammate {cough..Matthew} who got so annoyed he stabbed his house with scissors and added two non-regulation items, some string and a bottle cap. grr

This was my first time making a gingerbread house but definitely not my last. I'm thinking it's going to have to be a yearly thing because it was so.much.fun! Besides, the boys probably want a rematch.

2nd Annual Pumpkin Carving Contest

 
Matthew and I get a little competitive when it comes to carving pumpkins. This year was our 2nd annual competition.  Scoring is based off design, originality, and technique. According to our trick-or-treating judges I won with my owl! woo hoo! {Matthew was a little too ambitious with his freestyle piece in my opinion}  He even tried to pumpkin whisper..ha! Perhaps Matthew won last year with his cat..so it's only fair I took the title of pumpkin carving champion away from him!
 

Ok, so honestly which one do you like better? Are you Team Matthew or Team Mara? I'll still love you, I promise!

spooky scary..part two

So without further ado, the Halloween pictures are here {pumpkins included}. I went as Fran Fine aka The Nanny and Matthew went as my Mr. Sheffield. It was a pretty easy {and fun} costume: I wore bright tights, sequin dress, fur jacket, big hair, and I even drew on the widow's peak. Oh and who could forget the laugh! I loved Matthew's white streak in his hair... I think he liked it too! We found a legitimate photobooth in Echo Park, no counter just blinking lights and flashes--sulfur smell included. It was so exciting because we found it randomly and it's the first we've taken in LA together! Loved hanging out with this boy on Halloween. No matter what we do we always have so much fun. I love him a lot!

Hope everyone's week is going great! Isn't everyone loving the extra hour of sleep?! Matthew and I are going to see Matt & Kim, The Dandy Warhols and Silversun Pickups tonight. I'm pretty excited!

So until I can upload my pictures from this weekend, here are some ones of me and Matthew last weekend at the pumpkin patch (aka in front of Whole Foods). We are going to go to a real one too, I promise! We are planning on having a contest to see who can carve the scariest/spookiest/mostfreakishly amazing pumpkin. (I think I will win!) Can't wait!
