recipe: pumpkin cupcakes with cream cheese frosting

 For our Halloween party I made these yummy pumpkin cupcakes with cream cheese frosting! This is seriously the easiest recipe ever because it includes a little bit of cheating...

 

Want to know my secret? The cupcakes are made from the Trader Joe's Pumpkin Bread and Muffin Mix! You just add water, oil and eggs. I feel like a little bit of a baking cheater but they're easy and so good! I did make the cream cheese frosting recipe, though! I really like this one from All Recipes:

Cream Cheese Frosting

Ingredients

• 2(8 ounce) packages cream cheese, softened
• 1/2 cup butter, softened
• 2 cups sifted confectioners' sugar
• 1 teaspoon vanilla extract

Directions

1. In a medium bowl cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use. 

I made half the frosting recipe because I knew it would be too much. Then we decorated with a kit I got from William Sonoma! I loved putting on all the different sprinkles!  If you like pumpkin and cream cheese you seriously have to try this recipe!!
